Here's what you can cook fer supper w/ that mess of fish you caught..I cook this right regular.
Lilred's Fish Supper
Fish Cakes:
6 or 7 decent sized (1lb) fish of your choice
(boil em first till the meat flakes up and drain..should make 2 or 3 big cupfulls)
2 cups of mashed taters
1 egg
1/4 stick butter
salt & pepper to taste
Mix everything together, shape into cakes and dredge em in flour. Fry in butter till both sides are brown.
Fried Green Maters:
In pan, fry about 1/2 lb bacon. Take out bacon leaving the bacon grease. Slice the green maters as thick as you like them, dip em in a mixture of flour, salt and pepper, and fry in the pan w/ the bacon grease. Crumble the bacon to sprinkle on top.
Corn Cakes:
1 can of crushed corn
3/4 cup flour (plain)
2 beaten eggs
1/2 cup milk
2 teaspoons sugar
salt & pepper
Combine all ingredients in a bowl, pour in greased pan. (Use the cheap shortenin that's 1/2 vegetaable 1/2 lard)
Bake fer 15 mins on 350 deg.
