Can't help with cat tails. Our only experiment was a complete failure. Ick. Haven't tried again since, mostly because of laziness.
Dandelions need to be young. The younger the better. Boiling twice is a partial solution to the bitterness of older plants, but young succulent leaves are the only ones we found palatable.
One thing has stopped us from making wine and eating them. I am very hard pressed to find any good infestations of dandelions that have not be sprayed with something at some time.

since it is close to spring and the season for the lions, cattails I figured I would add something here.
A good place to pick dandelions is in a park, They mow grass there but never spray weed killer on anything. This is where I pick the blossoms for the wine and is some good wine too.
Only the young shoots in the center of the cattail is what I use. Tug on it and it will slip out. I dice the white part of the shoot and add to salad or just munch as it....taste like cucumber.
