Well I will preface this recipe by saying the waters up in the swamps and the frogs are everywhere....so needless to say I have freezers full of some of the most beautiful legs you have layed your eyes on.
I get tired of the old batter and fry, even thought thats soooooo good..so I tried this a few years ago and absolutely no one can tell what it is...but they cant stop eating them:
Par-boil the cleaned legs, remove and run under cold water...pull the white meat off the legs and back...(this takes a long time)
in separate bowl combine 1/4 cup Panko bread crumbs, sauteed celrey, green onions, red bell pepper. Add to bowl dry mustard or 2 tablespoons grey poupon, 2 eggs, salt, pepper, dash red pepper flakes, hot pepper sauce, parsley and 1/4 cup mayo...I added old Bay also...mix well form into patties, coat in more panko bread crumbs and freeze for a few hours...then I use my food saver and vacumn (gently) into packages of 4....
everything is cooked in these, so saute in butter until golden brown, lay a poached egg, bacon and top with hollandaise sauce.....:D
