Noticing the recent flap on Armadillo/leprosy.....growing up as a kid in Texas, we usta bbq these in deer camp all the time. I thought they were good. Any one else ever try these? I can't see it hurt me........................

OK Fellas, the reason I called this meeting..........well, simple...we are hungry. And its almost BBQ Season again!!! So lets all share your favorite MANBeef recipes!!!
For myself, I found a nice bacon rub, with brown sugar, rub, and let sit for at least 5 days, then smoke for about 2 hours at 140F, finish at 200F until internal temperature reaches 160F. For smoke wood I like hickory, alder, or applewood. Slice and serve fresh, or slice and freeze. Then thaw and serve, or fry in a pan and serve with eggs and toast!!! YUM!! |
