Recipe for teal duck?
 
:confused: My bro just got his first duck today, but I dont know how to cook it, any ideas for green wing teal?

kind of late reply here but I just did dove tonight this same way. Slice the duck in small bite size pcs.....wrap each one in bacon and bake in oven at 325 for an hr....or till bacon is well done....that is what I do with all the migrate birds cause breast is dark meat...and this now is after skinning and cutting the bird up and not plucking and leaving in the skin.....right? enjoy

thnx, but have you ever shot teal? the meat IS in bite size pieces, we fried it, yuck! but we did your idea for goose, it rocked! once again, bacon prevails!

My thought....slice duck breast about a 1/4", saute in bacon grease briefly..still pink. Put bacon and duck over pancakes
that are mixed with egg nog. Butter and syrup. Different but I love it!

You are right that teal are small but not so much. I've shot a ton of them and woodies too. Pick the breast down to the sides of the duck. Cut the whole breast off the carcass...breast bones and all. Take toothpicks and pin the breast on. Put the breast in either a small pan or in thick aluminum foil. Garlic salt little salt and pepper pat of butter or margarine on top few pieces of onion round the side. If ya have an orange put about an 1/8th(skinned) under the breast bone and spritzle lightly with water . cover firmly or roll the foil tightly. Bake for about 40 min in a 350 degree oven.. Last 10 mins uncovered so the skin will get browned good. Dey ain't nothin better than teal..or wood duck cooked this way. The only bone you have is the breast bones and if ya cook in foil you can just roll it up and throw it away. Little bit of buttered peas..baked tater on the side...uuummm-uummm

i have only ever known one way to cook a teal, two or three skinned in a crockpot with all the fixins you would use for chicken soup, two options, either cook them forever and eat as is with potatoes crrts etc. or remove them pick them to pieces put back in pot and make teal noodle soup
