Jerky question
 
I'm using London Broil for jerky (very low fat); how long will it keep in the fridge? I'm making this for hunting season but it's still a few weeks away. I figure it should last a while in the fridge but want to make sure. Thanks

True jerky should last for a long time with no refridgeration needed. Just store it in a cloth bag so that it can breathe.

We have a commercial place that claims they make jerky but all it really is is fancy smoked meat because it needs to be refridgerated or it will spoil.

I can not really give you any idea as to how long mine will last as it gets ate up too soon to ever spoil. I do know the batch I made to take to Colorado hunting was kept with no refridgeration for a couple of weeks before we went west.

All I ever use to make jerky is turkey breast. Lots cheaper than beef and once a meat is jerked the only differnce in the jerky is the texture. The jerk tastes the same to me no matter what the meat.

I make mine in a dehydrator. I've kept it in the fridge for about a week but never longer. It should be Ok for 2 or 3. Thanks again
