You are correct about the arrow shooting over the back of the deer if you are using the wrong pin.
As far as arrow deflection is concerned, there should be almost no deflection if you aim for the top of the deer's back. If the deer were directly beneath me, I would aim for its spinal column with a dead on hold using an imaginary pin that is closer than the 20 yard pin on my bow.
