I would start by buying a book or video on bird taxidermy. It takes some practice to get used to skinning, let alone fleshing. Leave fat inside and you'll have a greasy bird in short order. Learn the basics and get your supplies from Van Dykes or WASCO supply. It will take time but the end result is hard to beat.
