True jerky should last for a long time with no refridgeration needed. Just store it in a cloth bag so that it can breathe.

We have a commercial place that claims they make jerky but all it really is is fancy smoked meat because it needs to be refridgerated or it will spoil.

I can not really give you any idea as to how long mine will last as it gets ate up too soon to ever spoil. I do know the batch I made to take to Colorado hunting was kept with no refridgeration for a couple of weeks before we went west.

All I ever use to make jerky is turkey breast. Lots cheaper than beef and once a meat is jerked the only differnce in the jerky is the texture. The jerk tastes the same to me no matter what the meat.
