need pickled deer heart recipe

i need a awesomerecipe for pickled deer hear... went to a deer camp several years ago and they had 2- 2 1/2 gallon bottles filled with pickled deer heart that were awesome .... i tried duplicating it and cant even come close ......friend that brought me there says they wont give out recipe

The following is the recipe that I use and like.
1. Cook heart till tender.
2. Slice to thickness and size desired. I like mine sliced thin.
3. Place sliced heart in large jar or crock. I first put down layer of onions then layer of heart etc. till all heart has been used up.

Nex prepare the syrup to pour over.
Mix 1 cup vinegar with 1 cup water with 1 cup sugar along with
1 tablespoon of pickling spice(can find at local grocer) along with 3-4 whole cloves. After ingredients are mixed, bring them to a boil in a pan and pour over the meat. Repeat this process till all the meat and onions are covered. Let jar cool down. Then cover jar and place in fridge. Can be eaten in a day or so, but the longer it sits in fridge the better it gets. Mine has been in for six weeks so far. Will be a New Years day treat.

If you have a large jar with extra room, (I use a 1Gal. wide mouth Mason Jar), I like to add an additional 1 to 11/2 dozen hard boiled eggs and a couple of chopped up jalepena's. Pierce the eggs with a fork so they absorb better.

It is a tasty treat. Good luck with whatever recipe you decide on.
