Peanut fish (or chicken breast)
This is a quick and easy recipe for fish fillets or de boned chicken breast.
1. Dredge fish fillet (I use walleyes) in seasoned flour. Use whatever spices you like or are appropriate. e.g. Salt, pepper Old Bay seasoning for fish; Taragon for chicken. 2. Dip in egg wash. 3. Place egg-dipped fish or chicken into crushed peanuts (I use Planters Dry Roasted, crushed in food processor, not too fine). 4. Place on foil covered cookie sheet after spraying with lightly with olive oil. Spray also the food item. 5. Bake in middle rack of oven preheated to 450 degrees (450, no mistake). Fish will be done in 8-10 min depending on size of fillets. Chicken breasts, in 15-18 min, same. Juicy and the slightly browned peanut coating tastes great. |
