Drying fruit

When drying fruit, what does it mean to "blanch"?

BLANCHING IS A PROCESS WHERE THE FRIUT IS DIPPED IN BOILING WATER TO FACILITATE SKIN REMOVAL FROM THE FRUIT OR VEGETABLE. JUST DIP IT LONG ENOUGH THAT YOU CAN PULL THE SKIN OFF WITH YOUR FINGER NAIL. DON'T OVERCOOK THOUGH.
