Can't help with cat tails. Our only experiment was a complete failure. Ick. Haven't tried again since, mostly because of laziness.
Dandelions need to be young. The younger the better. Boiling twice is a partial solution to the bitterness of older plants, but young succulent leaves are the only ones we found palatable. One thing has stopped us from making wine and eating them. I am very hard pressed to find any good infestations of dandelions that have not be sprayed with something at some time. |

since it is close to spring and the season for the lions, cattails I figured I would add something here.
A good place to pick dandelions is in a park, They mow grass there but never spray weed killer on anything. This is where I pick the blossoms for the wine and is some good wine too. Only the young shoots in the center of the cattail is what I use. Tug on it and it will slip out. I dice the white part of the shoot and add to salad or just munch as it....taste like cucumber.
