Pig Shoulder

Got a frozen pork shoulder out of the freezer this morning. Felt
industrious.....sprinkled it with mesquite rub and triple wrapped it in foil. Put it on a bed of coals in my grill/smoker. Downed a dose of NyQuil and went back to bed...woke up bout 3hrs later and opened the foil. Put mesquite in the smoker end and let it flavor for about 2 more hours.
Man, this fell off the bones....with German PS it was delicious.

Yep pork shoulder particularly with the blade still in it is hard to beat, and with just a tiny bit or work is hard to mess up. I like to soak mine in cheap beer overnight then cover in lowrys and garlic.

Anyway you cook it though is fine by me.

Not sure what German PS is, but Sauerkraut goes with Pork like Potatoes with Gravy!!

I had two nice 4 Lbs. boneless butts so I fired up the smoker.



But first, I gave them a good rub down with yellow mustard.



They will spend the next 8 hours in the smoker between 180 and 200F with Hickory smoke.



Every few hours, I will spray them down with a mixture of 4 parts water and 1 part Vinegar.

Here it is after 3 hours. Time to add more hickory sawdust and spray it down with the vinegar water mixture.



It turned out great! I sliced up one and vacuum sealed the other for the freezer.
